Spinach Artichoke Dip and Choking Back the Tears

Today I am thankful for . . .

161.  The gift of My Boys Having The Opportunity to Spend Some Time Away on a little visit with their grandparents to see my brother, sister-in-law and their two kids.  I am missing the boys like crazy--I didn't think it would be this hard on me for them to be gone.

162.  The gift of Finding Some Great Sales on work clothes today.

163.  The gift of Date Night with Wayne; I ate the most delicious thing I've had in a restaurant in a long time - Hot Spinach and Artichoke Dip with Pita Bread.  SO YUMMY!

I am loving these daily updates from you. I have wanted to comment on so many of them, but I seem to get very limited computer time with a toddler around who only wants to watch fun You Tube videos every time I sit down at the computer! What restaurant had the great spinach and artichoke dip? We are heading back home at the end of June and we always try to find some place good to stop and eat at in S'toon. We used to go to Moxies, but the last time we were there, they had completely revamped their menu and a lot of our favourites were gone.

I have a great artichoke dip recipe that everyone loves and it is so easy to make. It doesn't have spinach, but I think you could easily add thawed, (previously) frozen spinach that has been squeezed dry.

Creamy Artichoke Dip

1 can of artichoke hearts, drain ½ the liquid
12 oz. cream cheese
¼ cup butter, softened or melted
¾ cup Parmesan cheese

Quarter the artichoke hearts if they are whole. Mix all ingredients together. Bake 20 or so minutes at 350 F, or until dip is well heated through. Serve with sliced baguette, pita triangles, or crackers.

The restaurant we went to is called "Fixin's" and it's in the Travelodge Hotel. We've been there twice, and the food has been great both times! Definitely worth the price. And if you go on Wednesdays, kids eat free (which probably only applies to your toddler because I think your other two are quite old by now:); I know what you mean about Moxie's--it's just not the same as it used to be. Thanks for commenting. It always makes my day when I see a little number at the bottom of my post indicating that someone is actually still out there reading!!
